RICE & PEAS RECIPE
Jean Moyo’s recipe (serves 6)
Here’s what you’ll need:
1 tin coconut milk (unsweetened)
500g long grain rice
250g dried red kidney beans
1 small onion – finely chopped
1 whole chilli
2 sprigs of fresh thyme
All-purpose seasoning, or salt and black pepper to taste
and here’s what you do…...
Soak the dried kidney beans overnight then drain, rinse and put
in large saucepan with 1½ pints of water.
Boil until soft (at least 30 minutes).
Now add everything else except the
rice.
Bring back to the boil for 5 minutes, add rice, stir well and add
more boiling water (or reduce the amount) as necessary so it covers
the rice by about an inch.
Now turn down the heat, cover and simmer for 20 - 30 minutes or
until all the water is absorbed and the rice is tender - it should
be nice and fluffy at this stage.
Then turn off heat leaving the rice to dry out (with the lid on)
for 10-15 minutes.
Serve and enjoy!
